Klein Constantia’s
Sauvignon Blanc vineyards occasionally experience warm
humid conditions towards the end of the vintage, encouraging
the development of the beneficial noble rot or botrytis
cinerea. |

| Description |
Limpid, pale gold
in colour, this wine is made in a lighter, more elegant
style. Rich apricot and marmalade flavours are well balanced
by fine acidity which provides backbone through to a mouthwatering,
sweet-sour finish. |

Botrytis infected grapes were selected
by hand towards the end of March of the cool 2002 vintage.
The viscous, concentrated must was vinified in temperature
controlled stainless steel vats before being matured for
18 months in French oak. |
