Harbour House Linefish and Klein Constantia Sauvignon Blanc

Enjoy this delicious summer linefish recipe from Harbour House restaurant with our Klein Constantia Sauvignon Blanc. The citrus in the dish is perfectly complemented by the fresh acidity and tropical fruit flavours of this cooler climate wine.

Ingredients
8 Shallots finely chopped
12 black pepper corns
250ml white wine
60ml white wine vinegar
2lt cream
5ml orange juice
5ml grapefruit juice
500g butter cubed & melted

Method
Put shallot, whole pepper, white wine and white wine vinegar in the pot, cook until onions are soft. Add the reduced cream and reduce further, then add the orange juice and your cubed butter. Whisk it until your butter is melted and your sauce is thick. If using salted butter there is no need to add salt, but if the butter is unsalted, add salt to taste.

Pour a glass of Klein Constantia Sauvignon Blanc and enjoy.
