Cabernet Sauvignon 2004

A late vintage by comparison to previous years resulted in finely textured, ripe tannins and wonderful ripe fruit flavours. 

After rigorous selection in the vineyard, ripe, healthy Cabernet Sauvignon grapes were carefully vinified in small 400kg fermentation vessels and the cap was manually punched down at regular intervals before the completion of alcoholic fermentation. 

Tasting Notes

Good dark colour, showing blackish rim. Initially minty, eucalyptus notes on the nose followed by classic cool climate Cabernet whiffs of cassis and sandalwood. The palate is marked by fresh acidity, firm yet dense tannins and fruit sweetness ending in a long, tapering finish. 

Maturation

Approachable now, but will soften and develop further with another year in bottle. Will keep 7-9 years.

Barrel Aging

The wine went through malolactic fermentation in 225L French oak barriques and was racked 3 times during a maturation period of 24 months before bottling
