Klein Constania

Cabernet Sauvignon 2007

Cabernet Sauvignon 2007

A relatively cool vintage punctuated by rains in early March which necessitated an additional week of ripening for our red vineyards. The resultant wine is structured and full bodied.

Grapes were harvested in March of this warm and relatively dry growing season. The must was fermented in rototanks at 26-30’C, with 6 hourly rotation ensuring optimum extraction of colour and tannins.

Tasting Notes

Clear-cut cabernet sauvignon aromas with a hint of menthol. The ripe fruit profile is offset by fine grained tannins and well integrated oak flavours. A dry, savoury character enhances the lengthy finish.

Maturation

Will benefit from further maturation up to 2018

Barrel Aging

After malolactic fermentation, the wine was matured in new 225L French oak barrels for 24 months
