Cabernet Sauvignon Reserve 1997

Sourced from a single vineyard on the warm, lower, north-facing slopes of the Klein Constantia vineyards at 70m above sea level.

Vines benefit from prevailing cool southerly sea breezes during the summer. Soils consist of decomposed Table Mountain granite and are not irrigated. Grapes were hand-harvested two weeks later than normal in March of this cool vintage. Fermentation took place in rototanks at 26-30 degrees C, with regular rotation ensuring maximum extraction of colour, tannins and flavours.

Tasting Notes

Deep ruby in colour, with pronounced aromas of blackcurrant, cedar and fresh mint. This exceptionally long and cool growing season has produced an elegant and complex wine with well-developed, finely-layered fruit. The complexity is equally evident on the palate; the delicate and generous flavours leading to a long, savoury finish. Tannins are firm and balanced, providing a tightly structured wine that will easily keep a total of 10-12 years.

The wine was then matured in 100% new 225L French oak barrels for 24 months
