Chardonnay 2000

Grown on the higher, cooler south-facing slopes of Klein Constantia Estate overlooking False Bay.

 

A warm, dry summer led to a smaller than normal crop of 4.5 tons per hectare, averaging 23º balling, being harvested in late February. After destalking and crushing, the wine was fermented to dryness.

 

Tasting Notes

On the nose, elegant fruit with toasty vanilla and nutty hints. Rich, rounded, mouth-filling flavours of ripe peaches and lime develop on the palate, which ends with a lemony twist. Good structure and excellent balance with a long finish.

 

Maturation

We recommend the wine for drinking now, but believe it will improve with another three years in the bottle.

Barrel Aging

Matured for ten months in 500 litre French oak barrels, 30% of which were new. During this time it spontaneously underwent malolactic fermentation.
