As this vineyard borders the Table Mountain Reserve, it is vulnerable to baboon damage – the first sign of ripening. Unirrigated soils consist of decomposed Table Mountain granite.
Grapes were hand-picked in late-March of this warmer vintage. Traditional Burgundian vinification techniques of natural wild yeast fermentation and foot pigeage in open vats were used to ensure increased complexity and subtlety.

Tasting Notes

Pale garnet in colour. Intense cranberry and red berry fruit aromas. Sappy, fruity and well-balanced with silky texture and a long firm finish. Drink now, but will keep and evolve further with 6-8 years in bottle.

Maturation

Drink now but will improve with further bottle maturation until 2006

Barrel Aging

The wine was matured for 12 months in French oak (Burgundy cooperage).
